Zucchini Panini

  • 235g (or 2 cups) of zucchini (grated)
  • 1 egg
  • 30g Parmesan cheese
  • 2 TB cornstarch
  • Salt (to taste)
  • Pepper (to taste)
  • 56g (or 1/2 cup) Reduced fat Mozz cheese
  • 1 oz your favorite Marinara
  • Non-stick spray

Makes 2 Servings

Shred and squeeze excess water from zucchini with a tea towel. Mix all ingredients except mozzarella.

On a skillet on Medium, add non-stick spray. Separate the mixture into 4 parts (eyeball it so it’s mostly equal). Add each part to the pan, flattening and shaping into a square until it’s about the size of a slice of bread (but thinner). Cook both sides until brown and firm.

This makes 2 sandwiches. To assemble each, take 2 “slices” and add 1/4 c (28g) mozzarella in between, leaving on the skillet only long enough for the cheese to melt.

Cut in half, and serve with marinara for dipping!
