Easy Seafood Paella

Makes 2 Servings.

With StrongerU, I have to make my meals easy and quick most of the time, but I can’t skimp on flavor. Paella is typically a labor of love. But this version hits all the important marks of a traditional paella, in a fraction of the time!

  • 3 tsp avocado oil
  • 1 TB turmeric
  • Trader Joe’s frozen seafood blend (thawed and drained)
  • 1 bag steamable brown rice
  • 85 grams frozen peas
  • 85 grams TJ fire roasted frozen peppers & onions
  • 2 frozen garlic cubes
  • 3 TB chicken broth (I used 1/2 tsp Better than Boullion and water)
  • Pinch of saffron (steep in chicken broth)
  • Lemon slices for garnish
  • Parsley for garnish

In a cast iron skillet on medium, add oil and seafood blend. It will be watery, so just let it sauté forthree minutes until cooked and then remove and set-aside. Discard all extra water. You may need to add a little more oil to the pan.

In the same skillet, add a little oil and the tumeric. Then add the garlic, peppers, and onions. Sauté for minute or two.

Stir in the rice, broth with saffron, peas. Add some salt and pepper to taste. Spread out the rice and flatten to the bottom of the pan. Add seafood and lemon slices to the top, evenly. Let this cook until crust forms, about five minutes.

I cut this in half and call it 1 serving.
